The Story Behind Pedroza’s
Pedroza’s has been part of Dawson County since January 1988, but the story really begins with Arthur and Virgie Pedroza, who are still leading the restaurant today.
Virgie was born and raised in Welch, Texas, and interestingly enough, she once worked in the very same building that would later become Pedroza’s Restaurant. Years later, that same building would become a place where families gather, celebrate, and share meals together.
Arthur was born and raised in Muleshoe, Texas, and he met Virgie while they were both attending West Texas A&M in Canyon. From there, their shared work ethic, strong family values, and dedication to serving their community helped build Pedroza’s into what it is today.
For more than 38 years, Arthur and Virgie have poured their hearts into this restaurant and into the Dawson County community.
We’re proud to continue serving the same community that has supported us since the beginning.
Our team is made up of experienced chefs and friendly staff who are dedicated to providing our guests with an exceptional dining experience. We are passionate about Tex-Mex cuisine and are always exploring new flavors and ingredients.
Our menu features a wide variety of Tex-Mex dishes, from classic favorites like tacos and enchiladas to more unique creations like our signature fajita plates. We also offer vegetarian and gluten-free options to accommodate all dietary needs.

Our Al Pastor is perfectly seasoned and grilled just right. Have the taco plate which comes with rice, beans, and pico de gallo. Or get it in a quesadilla.

Corn Rib appetizer. Bite size corn topped with chipotle mayo, red chile crema, queso fresco, and cilantro. Best for sharing as an appetizer or indulging solo.
